Ingredients
  1. 1.5 lbs Cremini Mushrooms
  2. 1 pkg Dried Wild Mushrooms
  3. 2 med. Onions
  4. 4 tbsp. Olive Oil
  5. 4 tbsp + 3 Tbsp Butter
  6. 8 c. Chicken Stock (or stock of your choice - I use home made)
Instructions
  1. Slice onions and put in frying pans with 3 tbsp. butter.
  2. Sautee until caramelized (30 minutes or so).
  3. While onions are cooking, chop/quarter mushrooms.
  4. Add chopped mushrooms and package of dried mushrooms into a pan with 4 tbsp. each olive oil and butter.
  5. Sautee until tender.
  6. Once onions and mushrooms are done, drain off some of the oil and butter.
  7. Add the mushrooms and onions to a large pot with the chicken stock.
  8. Bring to a boil, reduce heat and simmer for 20-30 minutes.
  9. Using a hand blender, blend the soup until silky smooth.
  10. Heat for about 5 more minutes and serve!
