Curry Rutabaga Fries

I love trying to trick my kids into eating healthy. What better way to do that than with fries!
Thing needed:
– Medium/large rutabaga
– 2 tbsp Coconut Oil
– 1/2 TSP each curry powder, ground cumin and paprika
– Pink Himalayan sea salt and fresh ground pepper to taste
– A very sharp knife!

Wash and peel the rutabaga. Take your time with the peeling as it is a bit tough and you don’t want your knife to slip!

Once you have it peeled, slice into about 1/4″ rounds and then slice into French fry-sized pieces.

Preheat your oven to 400F.  While you are slicing up your rutabaga (it may take awhile) have your coconut oil and spices melting together in a heat-safe bowl on the stove burner. I did this with a ceramic bowl over the burner that the heat escapes from while the oven is on.

Once all your “fries” are cut up put them in a big bowl and pour the melted oil/spice mixture overtop. Mix well with your hands or a wooden spoon.

Once mixed well, place in a single layer on a baking sheet covered with parchment paper. Season with the sea salt and pepper.

Bake @ 400°F for 30-40 minutes, turning half way.
