Ingredients
  1. 3 cups whole wheat all-purpose flour
  2. 2 tsp baking soda
  3. 1/2 tsp salt
  4. 2 cups shredded zucchini
  5. 2/3 cup honey
  6. 3 tbsp coconut oil - melted and cooled
  7. 2/3 cup unsweetened applesauce
  8. 2 eggs
  9. 1/2 cup milk of your choice
  10. 2 cups diced strawberries
  11. 4 tbsp chia seeds
Instructions
  1. Preheat oven to 350F.
  2. Line muffin tin with muffin liners and also spray liners - these muffins are ooey gooey and will stick to the papers!
  3. In a large bowl combine the dry ingredients; flour, baking soda, and salt. Set aside
  4. Add these wet ingredients in separate bowl; zucchini, honey, coconut oil, applesauce, eggs and milk.
  5. Add wet ingredients to the dry and stir until combined.
  6. Gently fold in strawberries and chia seeds.
  7. Evenly distribute batter among 24 muffin tins, filling about 3/4 full.
  8. Bake 20-22 minutes or until toothpick inserted into the middle of a muffin comes out clean.
  9. Cool on wire rack for 10 mins, then remove muffins, transfer to wire rack to finish cooling.
